The sushi oke, also referred to as handai or hangiri, is used when serving and carrying sushi, cooking vinegar rice, as well as cooking and serving chirashi sushi.
At Shimizu Mokuzai, we manufacture and sell classic wooden sushi okes made from the domestic Kiso Sawara wood.
The sushi okes of Shimizu Mokuzai are thick and durable, making them products you can use long-term.

Point of consideration when choosing a size

If you intend to use it for cooking,
we recommended selecting a larger size
than the standard size.

With dishes likes chirashi sushi, you will need to add in ingredients other than rice while cooking, therefore it would be easier to mix ingredients if you were to choose a larger size than that required for just the amount of rice that you wish to prepare.

Please consider the following when choosing:

2 to 3 people 3-go: 30 cm
3 to 4 people 5-go: 33 cm
5 to 6 people 7-go: 36 cm
7 people

In the case of the family sized sushi oke

Outer diameter 33 cm × height 9 cm Fits approximately 3-go.A little over half is a standard.Considering the ingredient enters here, for 3 people (about 2-go) are appropriate.Choosing a larger sushi oke will make mixing the rice easier once cooked.
The size will change depending on whether you are using the sushi oke for serving or cooking;please ensure that you choose the appropriate size for the number of people and the purpose.

A commercial-use sized sushi oke with an outer diameter of 45 to 90 cm.We accept orders
from as few as one piece for each size.Our products are used by business across Japan.

Before using it for the first time

Before using it for the first time

Please remove the wood resin from the sushi oke.In order to this, please put water into the oke, add about 35ml to 55ml of vinegar and stir.(Water that has been used to wash rice can be used instead of rice vinegar)
Once two to three hours have passed, rinse the product before using.
(You can use it without removing the resin from the sushi oke, but there may be cases when the rice ends up with a strong after-taste, particularly after the first use)

How to use a sushi oke to make delicious chirashi sushi

When you put rice into a sushi oke, first mix the rice gently and remove any extra moisture.
We recommended storing the rice at room temperature outside of direct sunlight after letting the vinegar rice cool down.
As only the portion of the rice that has had vinegar put on it is moister than the rest, along with the heat, vinegar rice becomes more delicious if you remove just the right amount of moisture as well.
